colorful form, actually evolved from very meager beginnings. In the 7th
century, Southeast Asians introduced the technique of pickling. The
Japanese acquired this same practice which consisted of packing fish
with rice. As the fish fermented the rice produced a lactic acid which
in turn caused the pickling of the pressed fish. Nare-Sushi is 1300
years old and refers to the finished edible product resulting from this

ingredients of a sushi, especially the seafood, should be fresh. The
rice cake should be firm and moist enough that it doesn't disintegrate
the moment you pick one up with your chopsticks or fingers. However they
should be able to crumble in your mouth in a heap without too much of a
munching effort on your part. If you must use condiments like soy sauce
when eating your sushi, remember not to dip the whole sushi in. Just dip
the end of the sushi as you eat. Eat some pickled ginger (called gari)
between bites of sushi to refresh your mouth for each new taste. Bon
